About The Dry
Developed in our new distillery location to reflect Heathcote's dry and rugged nature. The flavour profile is spicy, woody and slightly herbal to bring to mind the dry forestry aroma that is Heathcote to us. Mountain pepper berries are the spicy forward flavour, followed by cardamom and cassia bark, with a hint of lemon myrtle.
This gin is also named in relation to the distillation technique of “dry" vapour infusion, with no liquid contact or steeping of botanicals beforehand. We found this to give the perfect extraction for our botanicals.
